Dole Whip Inspired Pineapple Treat

I think pineapples are the coolest fruit. There’s so much about them that should be a turn-off; they’re pokey to the touch and the spikes at the top say, “Leave me alone”. However, the sweetness of the fruit screams, “SUMMER!”.

I can’t buy pineapple until it’s officially summer. Something about the fruit in my home while we’re still in school… well, I probably won’t finish the school year.

The Inspiration

Are you familiar with the Dole Whip at Disney Parks? It’s one of those must-try treats when you visit, just like the Mickey Mouse-shaped chocolate-coated ice cream bar. Just thinking of those brings back the best memories of that vacation. Isn’t it funny how food can do that?!

Back to the Dole Whip. We had it for the first time at Animal Kingdom; regular for the kids and a splash of rum for us. Oh, it doesn’t disappoint. It’s whipped pineapple and some other things and it’s perfectly summer. Of course, there are a lot of recipes on the internet that will tell you how to make it and a lot of them have ice cream which was surprising as I don’t recall tasting that.

I had a pineapple a couple of weeks ago that was almost overly ripe. My only option was to cut it up and freeze it and hope I remembered to use it for smoothies.

Until… I remembered the Dole Whip. Not wanting to use ice cream, I set out to recreate our favorite Disney treat.


About that Pineapple

I love fresh ingredients. Sometimes it’s necessary to use canned or frozen but I promise you that canned pineapple will *not get you the same results. So, what’s best?

A fresh pineapple will give you about 4 cups of cubed pineapple. Highly recommend this route! To get the frozen-like consistency, you’ll need to freeze at least half of your pineapple. It doesn’t take long. After all, a pineapple is about 85% water. I like some of the pineapple to not be frozen so that I don’t have to add pineapple juice to the blender.



Frozen pineapple is a great option too! Just thaw out a 1/2 cup or so, so that it acts as a liquid in your blender and gets the frozen pineapple moving.

Coconut Milk

You need to use canned coconut milk. Feel free to grab the “lite” version. You will not be happy if you go for any version of the coconut milk you find in the refrigerated alternative milk section. Canned is the way to go!


Extras

If you want to spice it up a bit, you can add a little rum. Dark, spiced, or coconut; it’s really your preference. I add about 3 ounces to the blender. I like to serve it with a wedge of lime when I add the rum.

Dole Whip Inspired Pineapple Treat

Ingredients

1 1/2 c frozen pineapple

1/2 c fresh pineapple (or thawed)

1 ounce coconut milk, canned

Extras: 

3 oz rum, your choosing 

lime wedge

How to Make:

  1. Add coconut milk to the blender.

  2. Add pineapple.

  3. Add rum, if using.

  4. Blend till smooth. 

  5. Serve with a spoon and/or lime wedge.

Notes

  • 1 pineapple will give you about 4 cups of pineapple.

  • This recipe makes 2 8oz servings and fits great in the Ninja.

  • A bag of frozen pineapple is typically 16 oz (2 cups).

  • You will not get the same results with canned pineapple.

  • Use canned coconut milk (lite is fine).
